We are seeking experienced a Chef and a Chef Supervisor to join our teams at Randwick Barracks. Youll work alongside experienced hospitality professionals preparing quality meals maintaining high culinary standards and contributing to exceptional dining experiences in a structured and rewarding environment.

ESS Defence provides food service and hospitality support to Defence sites across Australia. We deliver high-quality meals that support the wellbeing of Australian Defence Force personnel.

KEY RESPONSIBILITIES

Prepare high-quality meals in a bulk cooking and catering environment
Maintain food safety hygiene and HACCP standards
Ensure quality portion control and food presentation standards are met
Support stock control ordering and inventory management
Work collaboratively as part of a professional kitchen team
Support meal services functions and daily kitchen operations
Assist with menu implementation and daily food production planning
Promote a positive safe and productive kitchen culture

SKILLS AND EXPERIENCE

Certificate III in Commercial Cookery
Experience in commercial kitchens catering or high-volume food production environments
Knowledge of HACCP and food safety standards
Strong organisational skills and attention to detail
Reliable professional and team-focused approach
Excellent communication and customer service skills
Previous leadership or supervisory experience highly regarded for Chef Supervisor applicants
Ability to obtain and maintain a National Police Check (Defence clearance required for Chef Supervisor role)
